Cheesy Stuffed Artichoke

Everything's better stuffed with cheese!
Ingredients
  • 1 lemon, thinly sliced
  • 4 large artichokes, trimmed
  • 2 c. panko bread crumbs
  • 1 c. shredded mozzarella, plus more for sprinkling
  • 1 c. freshly grated Parmesan
  • ¼ c. chopped fresh parsley
  • ⅓ c. extra-virgin olive oil
  • 2 cloves garlic, minced
  • kosher salt
  • Freshly ground black pepper
  • Warm marinara, for dipping
Instructions
  1. Preheat broiler. In a large pot, add about ½ inch of water and lemon slices. Add artichokes, then bring to a simmer and steam until tender, about 25 minutes. Remove and let cool until able to handle.
  2. Meanwhile, prepare stuffing: In a large bowl, mix together Panko, mozzarella, Parmesan, parsley, olive oil, and garlic. Season with salt and pepper.
  3. Pack bread crumb mixture into the artichoke leaves. Place artichokes in a baking dish, sprinkle with more mozzarella, and bake until cheese is melted and bread crumbs are golden, about 5 minutes. Serve with marinara.
