Epic Chicago Pizza

Ingredients
- Cake pan (20x7 centimeters)
- Flour
- Olive oil
- Filling:
- 100 grams shredded cheese
- 200 grams mozzarella cheese
- 600 grams tomato sauce
- 17 pepperoni slices
- 4 bunches boiled spinach, drained well
- 2 tomatoes
- 10 black olives
- 10 mushrooms
- Tabasco
- Basil leaves
- Pizza dough:
- 150 grams flour
- 30 grams rice flour
- ¾ teaspoon instant dry yeast
- 1 tablespoon sugar
- ½ teaspoon salt
- 1 tablespoon olive oil
- Hot water (90-100cc)
Instructions
- Combine all ingredients for the pizza dough. Knead until it starts to form a dough.
- Let it sit in a warm place (40 degrees C) for 30-40 minutes.
- Flatten and shape dough into a circle and transfer to a cake pan, greased with olive oil.
- Fill with your favorite fillings.
- Bake for 8-10 minutes at 160 degrees C. Remove cake pan and cook for 7-9 minutes at 240 degrees C.
- Top with fresh basil and serve.
