Reuben Beer Cheese Nachos


Nachos might not be the most traditional St. Patrick's Day food, but they might be the most delicious!
  • 1 large bag pita chips
  • ½ lb. deli corned beef, chopped into bite-size pieces
  • ½ c. sauerkraut
  • 3 tbsp. butter
  • 3 tbsp. all-purpose flour
  • ½ tsp. smoked paprika
  • 1 c. beer, such as Guinness
  • 1 c. milk
  • 2 c. shredded Cheddar
  • 1 c. shredded Swiss cheese
  • 1 tbsp. horseradish
  • Kosher salt
  • Freshly ground black pepper
  • ¼ c. freshly chopped chives, for garnish
  1. Make cheese sauce: In a large saucepan over medium heat, melt butter. Whisk in flour and paprika. Cook 1 minute. Slowly add beer and milk to flour mixture, stirring constantly. Continue whisking over medium heat until mixture has thickened, about 3 minutes. Remove from heat and stir in cheeses until fully melted. Stir in horseradish and season with salt and pepper.
  2. Spread an even layer of pita chips on your serving tray. Scatter with half the corned beef and half the sauerkraut. Pour half the cheese sauce over nachos, then top with another layer using remaining ingredients. Garnish with chives and serve.
