Candy Cane Chocolate Tart

Ingredients
- 28 sandwich cookies, crushed finely
- 50g melted butter
- 3 candy canes, crushed
- ½ cup double cream
- 1 cup single cream
- 10oz finely chopped milk chocolate
- 1 cup double cream
- 1 tbsp icing sugar
- Crushed candy canes
- Chocolate Shavings
Instructions
- Mix together cursed cookies, butter, and crushed candy canes. Press into the bottom and sides of a tart tin. Chill in the fridge for 30 minutes until set and ready to use.
- Meanwhile, heat creams in a pan until simmering. Turn off the heat. Add the chopped chocolate and stir gently to combine. Add the peppermint extract and remove from heat to cool to room temperature.
- Pour into the chilled crust and transfer to the fridge for 40 minutes to set.
- Garnish with chocolate shaving and crushed candy canes before serving.
