Animal Cookie Cheesecake

A childhood favorite reimagined as a cheesecake.
Ingredients
  • FOR THE CRUST
  • 2½ c. frosted (white and pink) animal cookies, finely crushed
  • 4 tbsp. butter, melted
  • 2 tbsp. granulated sugar
  • Pinch of kosher salt
  • FOR THE FILLING
  • 4 (8-oz.) blocks cream cheese, softened
  • 1 c. granulated sugar
  • 3 large eggs
  • 1 tsp. pure vanilla extract
  • ½ c. sour cream
  • 2 tbsp. all-purpose flour
  • ½ tsp. kosher salt
  • 2 c. frosted (white and pink) animal cookies, roughly chopped
  • FOR THE GLAZE
  • 2 c. powdered sugar
  • 2 tbsp. whole milk
  • Neon pink food coloring
  • FOR THE GARNISHES
  • Whipped cream
  • Whole frosted animal cookies
  • Rainbow nonpareil sprinkles
Instructions
  1. Preheat oven to 350°. In a large bowl, mix together animal cracker crumbs, butter, sugar, and salt. Press into the bottom of an 8" or 9" springform pan.
  2. Bake crust until light golden, about 10 to 12 minutes. Set on rack to cool completely and reduce oven temperature to 325°
  3. Make cheesecake: In a large bowl using a hand mixer (or in the bowl of a stand mixer), beat cream cheese and sugar together until no lumps remain. Add eggs, one at a time, then stir in vanilla and sour cream. Add flour and salt and beat until just combined. Fold in chopped animal crackers.
  4. Pour mixture over the crust. Wrap bottom of springform pan in aluminum foil and place in a large roasting pan. Pour in enough boiling water to come up halfway in the baking pan.
  5. Bake until center of cheesecake only slightly jiggles, about 1 hour 30 minutes. Turn off the heat, prop open oven door, and let cheesecake cool in oven, 1 hour.
  6. Remove foil and refrigerate cheesecake for at least 5 hours and up to overnight.
  7. Run a paring knife around the edges of the cake. Release springform pan from cheesecake and transfer to a platter.
  8. Make the glaze: Sift the confectioners sugar into a medium bowl and whisk in 2 tablespoons of milk and the food coloring. The glaze should be just thin enough to pour, but it will be thick.
  9. Pour glaze over chilled cheesecake and let sit at room temperature until set, about 30 minutes.
  10. Dollop the top of the cake with whipped cream and stand animal crackers in the whipped cream. Crumble crushed animal crackers in the center of the cake. Finish with sprinkles.
