Mason Jar Cheesecakes

These mini cheesecakes are so easy and look fancy AF.
Ingredients
  • Cooking spray
  • 12 oz. cream cheese, softened to room temperature
  • ½ c. granulated sugar
  • 2 large eggs
  • 2 tbsp. sour cream
  • 1 tsp. pure vanilla extract
  • 12 graham crackers, finely crushed
  • 7 tbsp. melted butter
  • 2 tbsp. packed brown sugar
  • Pinch kosher salt
  • Sliced strawberries, for garnish
Instructions
  1. Preheat oven to 325° and spray 12 mason jar lids with cooking spray.
  2. Make the crust: Stir together graham crackers, butter, brown sugar and salt. Press into lids and bake for 8 minutes.
  3. Meanwhile, in a large bowl using a hand mixer, blend cream cheese, sugar, eggs, sour cream, and vanilla until combined.
  4. Divide cheesecake mixture amongst the crusts and bake for 10 minutes.
  5. Let cool for 1 hour, then top with strawberries and serve.
