Mason Jar Cheesecakes

These mini cheesecakes are so easy and look fancy AF.
Ingredients
- Cooking spray
- 12 oz. cream cheese, softened to room temperature
- ½ c. granulated sugar
- 2 large eggs
- 2 tbsp. sour cream
- 1 tsp. pure vanilla extract
- 12 graham crackers, finely crushed
- 7 tbsp. melted butter
- 2 tbsp. packed brown sugar
- Pinch kosher salt
- Sliced strawberries, for garnish
Instructions
- Preheat oven to 325° and spray 12 mason jar lids with cooking spray.
- Make the crust: Stir together graham crackers, butter, brown sugar and salt. Press into lids and bake for 8 minutes.
- Meanwhile, in a large bowl using a hand mixer, blend cream cheese, sugar, eggs, sour cream, and vanilla until combined.
- Divide cheesecake mixture amongst the crusts and bake for 10 minutes.
- Let cool for 1 hour, then top with strawberries and serve.
