Richmond Chicken and Peppers Picnic Bread

These Chicken Sausage Pizza Sandwiches are perfect for picnic season!
Ingredients
  • 8 Richmond Chicken Sausages
  • 2 tsp oil
  • 1 clove garlic, minced
  • 250ml passata
  • 1 tsp dried oregano
  • ½ tsp chili flakes
  • Salt and pepper to taste
  • 1 cup mixed peppers, sliced thinly
  • 1 onion, sliced thinly
  • 500g pizza dough
  • Sliced mozzarella cheese
  • 2 tbsp chopped fresh basil
  • ¼ cup garlic butter
  • Ranch dressing for dipping
Instructions
  1. Preheat oven to 180ºC/350ºF. Arrange sausages on a tray and bake for 25 mins until golden brown. Remove and slice into ¼” pieces.
  2. Heat 1 tsp oil in a saute pan over medium heat. Add garlic and saute until fragrant. Stir in the passata, oregano, and chili flakes. Bring to a simmer and cook until thickened. Season with salt and pepper to taste.
  3. In a separate pan, add remaining oil. Cook peppers and onions until softened, remove and cool.
  4. Roll out pizza dough into a large rectangle. Spread tomato sauce in the center of the dough leaving the edges bare. Top with peppers and onions, sliced sausages, mozzarella slices, and basil.
  5. Roll the dough into a large spiral log from the long end up., pinching the ends to seal tightly.
  6. Transfer to a baking tray. Brush generously with garlic butter. Bake for 30 minutes until golden brown.
  7. Slice and serve with ranch dipping sauce.
