Deep Fried BBQ Chicken Stuffed Pizzadilla

Whats better than Pizza? Deep Fried BBQ Chicken Stuffed Pizzadilla!
Ingredients
  • 6 chicken breasts

  • BBQ RUB:
  • ½ tbsp paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • ½ tsp mustard powder
  • 1 tbsp brown sugar
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tbsp oil

  • 12 strips bacon, chopped and cooked crispy
  • 1 red onion sliced
  • ? ? cup spring onions, chopped
  • ½ cup grated cheddar
  • ½ cup grated mozzarella
  • ¾ cup bbq sauce

  • Ranch dressing:
  • 1 ½ cups Sour cream
  • ¼ cup mayonnaise
  • 1 tbsp chopped fresh chives
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 2 tsp lemon juice
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Salt and pepper to taste

  • 2 large tortillas
  • 6 eggs, whisked
  • 2 cups plain flour, seasoned
  • 3 cups seasoned breadcrumbs
  • Oil for frying

  • ½ cup pizza sauce
  • Sliced pepperoni
  • Grated mozzarella
Instructions
  1. Mix the bbq rub ingredients together in a bowl. Rub over chicken and arrange on a lined tray. Bake for 20-30 minutes until chicken is cooked through.
  2. Remove and shred chicken; transfer to a bowl.
  3. Add bbq sauce, bacon, onions and cheese to the chicken and stir to combine.
  4. Place one tortilla in the bottom of a springform tin. Fill with the bbq chicken mix and top with a second tortilla. Add a piece of parchment on top and a weight. Chill in the fridge for about 1 hour to set.
  5. Meanwhile, mix all of the ranch ingredients together in a bowl, keep in the fridge until ready to serve.
  6. Remove from the quesadilla from the tin and slice into 6 triangles.
  7. Dip each triangle in flour, then eggs then bread crumbs.
  8. When oi is at 170ºC, fry the triangles until golden brown.
  9. Rearrange the triangles in a circle. Top with pizza sauce, cheese and sliced pepperoni
  10. Grill for 5 minutes to melt the cheese.
  11. Serve with ranch sauce top dip! Enjoy.
