Snickerdoodle Pie

Tastes like a giant snickerdoodle cookie.
Ingredients
- FOR THE PIE
- 1 Prepared pie crust
- 2 tbsp. butter, melted
- 2 tbsp. cinnamon sugar, divided
- ¼ c. Butter, softened to room temperature
- ¾ c. sugar
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. cream of tartar
- 1 egg
- ½ c. whole milk
- 1 tsp. vanilla
- 1¼ c. all purpose flour
- FOR THE GLAZE
- 4 tbsp. cream cheese, softened
- 2 c. powdered sugar
- ¼ c. whole milk
Instructions
- Preheat oven to 350°. Place pie crust into pie plate and crimp the edges, if desired. Brush dough with butter and sprinkle with 1 tbsp cinnamon sugar.
- In a large bowl, add butter and beat with a hand mixer until fluffy, about 2 minutes. Add sugar, baking powder, salt and cream of tartar until well combined. Add egg, milk and vanilla and beat again. When smooth, beat in flour until completely combined.
- Pour filling into prepared pie crust and sprinkle with remaining cinnamon sugar.
- Cover with foil and bake 20 minutes, remove foil and bake 20 minutes more, until top is golden. Set aside to cool.
- In a medium bowl, combine cream cheese, powdered sugar and milk. Using a hand mixer, mix until smooth. Add more powdered sugar for a thicker glaze if desired.
- Drizzle glaze over pie and serve.
