Snickerdoodle Pie

Tastes like a giant snickerdoodle cookie.
Ingredients
  • FOR THE PIE
  • 1 Prepared pie crust
  • 2 tbsp. butter, melted
  • 2 tbsp. cinnamon sugar, divided
  • ¼ c. Butter, softened to room temperature
  • ¾ c. sugar
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cream of tartar
  • 1 egg
  • ½ c. whole milk
  • 1 tsp. vanilla
  • 1¼ c. all purpose flour
  • FOR THE GLAZE
  • 4 tbsp. cream cheese, softened
  • 2 c. powdered sugar
  • ¼ c. whole milk
Instructions
  1. Preheat oven to 350°. Place pie crust into pie plate and crimp the edges, if desired. Brush dough with butter and sprinkle with 1 tbsp cinnamon sugar.
  2. In a large bowl, add butter and beat with a hand mixer until fluffy, about 2 minutes. Add sugar, baking powder, salt and cream of tartar until well combined. Add egg, milk and vanilla and beat again. When smooth, beat in flour until completely combined.
  3. Pour filling into prepared pie crust and sprinkle with remaining cinnamon sugar.
  4. Cover with foil and bake 20 minutes, remove foil and bake 20 minutes more, until top is golden. Set aside to cool.
  5. In a medium bowl, combine cream cheese, powdered sugar and milk. Using a hand mixer, mix until smooth. Add more powdered sugar for a thicker glaze if desired.
  6. Drizzle glaze over pie and serve.
