Bacon Jam Sliders

We can't think of a single thing bacon jam can't improve. These sliders are no different.
Ingredients
- FOR THE BACON JAM
- 1 lb. thinly sliced bacon, cut into 1" pieces
- 1 medium yellow onion, finely chopped
- ⅓ c. packed brown sugar
- 2 tbsp. maple syrup
- ⅓ c. apple cider vinegar
- 1 (1.25-oz.) packet McCormick Chili Seasoning Mix, divided
- FOR THE SLIDERS
- 1½ c. ground beef
- 3 slices American cheese, quartered
- 12 small potato slider buns
- 12 bread and butter stacker pickles, halved
Instructions
- Make the bacon jam: In a medium saucepan over medium heat, cook bacon, stirring occasionally, until crispy, about 15 minutes. Transfer bacon to a paper towel-lined plate, reserving about a tablespoon of bacon fat in the pan.
- Add onion to saucepan and cook, stirring often, until golden and tender, about 6 minutes. Return cooked bacon to pan and stir in brown sugar, maple syrup, vinegar, and 1 tablespoon of chili seasoning mix. Bring mixture to a simmer and cook, stirring occasionally, until liquid has reduced and thickened and onions are jammy, 7 to 10 minutes. Let cool slightly.
- Meanwhile, make the sliders: In a medium bowl, stir together beef and remaining chili seasoning mix. Form into 12 small patties, just a little bit wider than the buns.
- In a large cast iron skillet over medium-high heat, cooking in batches if necessary, arrange patties evenly spaced apart. Cook, until patties are lightly charred on the bottom, about 2 minutes. Flip patties and cook 2 minutes more.
- Top each patty with 1 piece American cheese, folding the cheese to fit onto the patty. Cover and cook until the cheese is melty, 1 minute more.
- Layer bottom buns with 2 pickles, a patty, and a large spoonful of bacon jam, and close the sliders with the top buns.
