Black Forest Cheesecake

This cheesecake is loaded with a black cherry fruit filling and it is simply delicious.
Ingredients
  • FOR THE BASE
  • 200 g dark chocolate digestives
  • 60 g unsalted butter, melted
  • FOR THE CHEESECAKE
  • 500 g full fat cream cheese, at room temperature
  • 100 g icing sugar
  • 1 tsp. vanilla essence
  • 200 ml double cream
  • 1 x 410g tin black cherry fruit filling, drained
  • FOR DECORATION
  • Chocolate mirror glaze
  • 1 x 410g tin black cherry fruit filling, drained
Instructions
  1. Line the base and sides of a 20.5cm (8in) round springform cake tin.
  2. Make the base: whiz the biscuits in a food processor until they resemble breadcrumbs (alternatively put them in a sealed plastic bag and crush them with a rolling pin). Mix in the melted butter, then press the mixture firmly into the base of the tin with the back of a spoon. Chill.
  3. Beat together the cream cheese, icing sugar, vanilla and double cream until smooth. Fold in the black cherries then tip into the tin and spread to level. Chill for at least 6 hours.
  4. Remove cheesecake from the tin and peel away parchment. Melt the chocolate glaze as per the package instructions and drizzle over the top. Pile the black cherries in the centre of the cake and then chill until ready to serve.
