Chicken Cordon Bleu Lasagna Roll Ups

Ingredients
  • Sauce:
  • ¼ cup butter
  • ¼ cup flour
  • 1 cup milk
  • ½ tablespoon garlic powder
  • ½ tablespoon Dijon mustard
  • 1 teaspoon salt
  • Pinch of black pepper
  • ½ cup dry white wine
  • 4 ounces cream cheese, softened
  • ½ cup shredded Swiss cheese
  • To assemble:
  • 14 lasagna noodles, cooked al dente, cut in half
  • 1 cup rotisserie chicken, shredded
  • 1 (7-ounce) package deli ham slices, sliced in half
  • 1 (7-ounce) package Swiss cheese slices, sliced in half
  • ½ cup shredded Swiss cheese
  • ½ cup panko breadcrumbs
  • Salt and pepper
  • Finely chopped flat leaf parsley, to garnish
Instructions
  1. Cook lasagna noodles to al dente according to package directions. Drain and slice in half. Set aside until ready to use.
  2. For the sauce: In a large saucepan, melt butter over medium heat. Add flour and cook for 1 minute. Slowly whisk in milk. Add garlic powder, Dijon mustard, salt, pepper and white wine. Bring to a bubble. Stir in cream cheese and Swiss cheese until well incorporated. Remove from heat.
  3. Preheat oven to 375 degrees.
  4. To assemble: On each lasagna strip, spread a bit of the white sauce, then layer on the ham, a Swiss cheese slice and shredded chicken. Roll up tightly. Repeat with remaining lasagna noodles.
  5. Pour the remaining sauce into the bottom of the baking dish. Nestle the lasagna rolls into the baking dish, sprinkle on the shredded Swiss cheese, cover with breadcrumbs and season with salt and pepper.
  6. Bake for 10 to 15 minutes or until the cheese is melty and the breadcrumbs are golden brown.
  7. Serve garnished with flat leaf parsley. Enjoy!
