Ingredients
1½ pounds ground beef
1½ pounds ground pork
3 tablespoons butter, melted and cooled
⅓ cup grated onion
½ panko breadcrumbs
2 large eggs
½ teaspoon nutmeg
½ teaspoon allspice
1¼ teaspoon salt
½ teaspoon white pepper
Oil for searing
3 sheets puff pastry
Egg wash for topping
½ cup Gruyere cheese
Chopped parsley/chives for garnish
Lingonberry jam for serving
For the gravy:
¼ cup butter
⅓ cup all-purpose flour
3 cups beef broth
½ cup sour cream
Salt and pepper to taste
Instructions
Preheat oven to 400°F.
In a bowl, mix together beef, pork, butter, onion, breadcrumbs, eggs, nutmeg, allspice, salt and pepper. Mix thoroughly and form into 1-inch balls.
Working in batches, sear meatballs until golden on all sides, swirling the pan to keep them round in shape. Remove and set aside while preparing the gravy.
In the same skillet, melt butter and whisk in flour followed by beef stock. Bring to a boil, cooking until sauce starts to thicken. Stir in sour cream, half the Gruyere and season with salt and pepper.
Return meatballs to the pan, stir to coat and simmer for 3-5 minutes. Spoon into prepared baking dishes and top with puff pastry, cutting strips for a lattice if you're feelin' fancy.
Brush with egg wash and sprinkle with remaining Gruyere. Bake for 20-30 minutes until bubbly and pastry is golden and puffy.
