Salami Breakfast Cups
 
 
Salami Breakfast Cups are our favorite new low-carb breakfast.

Ingredients
  • 60 thin salami slices, about 2½" in diameter
  • 1 c. shredded mozzarella
  • 12 large eggs
  • Kosher salt
  • Freshly ground black pepper
  • Freshly chopped parsley, for garnish
Instructions
  1. Preheat oven to 400ยบ. Line the bottom of each cup of a 12-cup nonstick muffin tin with a slice of salami. Arrange 4 salamis around the center slice. Sprinkle each cup with mozzarella and crack an egg inside. Season with salt and pepper.
  2. Bake until eggs are cooked through, 12 to 15 minutes.
  3. Garnish with parsley before serving.
