Antipasto Grilled Cheese
 
 
This is how to your favorite antipasto platter into one of the most amazing grilled cheese sandwiches you'll ever have. We're not kidding.

Ingredients
  • 4 tbsp. butter, softened, divided
  • 1 tsp. dried oregano
  • 1 tsp. garlic powder
  • 8 slices sourdough bread
  • ¼ lb. deli sliced ham
  • 2 c. shredded mozzarella
  • ½ c. chopped artichoke hearts
  • ½ c. sliced pitted black olives
  • ½ c. pepperoni
  • ½ c. sliced pepperoncini
Instructions
  1. Spread about ½ tablespoon butter onto one side of a slice of bread and sprinkle with a small pinch each of oregano and garlic powder. Place bread butter side-down on a clean working surface, then top with about a ¼ each of ham, mozzarella, artichokes, olives, pepperoni, and pepperoncini.
  2. Spread another ½ tablespoon butter onto a second slice of bread and sprinkle with oregano and garlic powder. Place bread butter-side up on top of sandwich. Repeat to make 4 sandwiches.
  3. Heat a large skillet over medium heat. Place 1 to 2 sandwiches in skillet and cook until the bottom slice of bread is golden and the cheese is starting to melt, about 4 minutes. Carefully flip sandwich and cook until golden underneath, about 4 minutes more. Repeat with remaining sandwiches. Serve immediately.
