Bloody Marys get topped with all sorts of crazy things, but we don't know why we've never done this before! A quesadilla is the perfect pairing and now we can't have Bloody Mary without one.

Ingredients
FOR THE BLOODY MARYS
3 c. tomato juice
1 c. Smirnoff
2 tbsp. Worcestershire sauce
1 tbsp. prepared horseradish
1 tbsp. hot sauce
Juice of ½ lemon
Freshly ground black pepper
FOR THE QUESADILLAS
4 tsp. extra-virgin olive oil, divided
2 bell peppers, thinly sliced
½ large onion, thinly sliced
½ tsp. chili powder
Kosher salt
Freshly ground black pepper
3 medium flour tortillas
1½ c. shredded cheddar
1½ c. shredded Monterey jack
2 green onions, thinly sliced
FOR GARNISH
Lime wedges
Chili powder
JalapeƱos, sliced
Instructions
In a large pitcher combine tomato juice, vodka, Worcestershire, horseradish, hot sauce, and lemon juice and season generously with pepper.
In a large skillet over medium heat, heat 2 teaspoons oil. Add peppers and onion and cook until soft, 5 minutes. Season with chili powder, salt, and pepper. Remove from skillet.
To same skillet heat remaining oil. Add a tortilla and top half the tortilla with a third of both cheeses, pepper-onion mixture, and green onions. Fold other half of the tortilla over and cook, flipping once, until golden, 3 minutes per side. Repeat to make two more quesadilla. Cut into triangles.
Assemble drink: Rim 6 glasses with a lime wedge. Place chili powder on a small plate or bowl and dip rim of glasses into seasoning. Pour drink into glasses and garnish with a jalapeƱo, lime wedge, and a quesadilla triangle.
