Chocolate Marble Cheesecake
 
 
This Chocolate Marble Cheesecake will make you really happy.

Ingredients
  • 24 sandwich cookies
  • 2 tbsp melted butter
  • 900g cream cheese, softened
  • 4 eggs
  • 1 cup sour cream
  • ¼ cup cornstarch
  • 75g dark chocolate, melted
  • 75g white chocolate, melted
  • 200g dark chocolate, finely chopped
  • 200g heavy cream
  • 1 tsp golden syrup
Instructions
  1. Preheat oven to 180ºC.
  2. In a food processor, add sandwich cookies and blitz until a fine crumb. Pour in melted butter and blitz until mixture is like wet sand.
  3. Press cookie mix into a greased and lined springform pan. Press the mixture up the sides and on the bottom. Bake for 8 minutes and let cool completely.
  4. Meanwhile, in a large bowl, mix together cream cheese and sugar until smooth. Add the eggs in one at a time, mixing in between. Add cornstarch and sour cream and mix until smooth.
  5. Reduce the oven to 140ºC.
  6. Split batter into two bowls. Add melted dark chocolate to one bowl and melted white chocolate to the other. Mix until combined.
  7. Using scoops, alternate pour white chocolate and dark chocolate batters in. Using a knife or palette knife swirl the mix. Tap gently and place in the oven. Bake for 1 ½ hours until the cheesecake is just jiggly in the centre. Turn the oven off, keep the cheesecake in the oven and wedge the door open with a wooden spoon. Leave in until oven is cooled.
  8. Let cheesecake cool completely and cover and refrigerate overnight.
  9. To make the ganache, add dark chocolate and cream to a bowl over a pot of simmering water. Stir until completely melted and combined. Add in golden syrup and stir to combine.
  10. Slice cheesecake and serve with berries and ganache.
