Ingredients
  • ½ cup unsalted butter softened
  • ⅓ cup granulated sugar
  • ⅓ cup packed brown sugar
  • 4 eggs
  • 1 tsp vanilla essence
  • 1⅓ cups all-purpose flour
  • 1½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ cup milk

  • 12 apples, peeled and cored
  • 1 cup brown sugar
  • 4 tbsp unsalted butter
  • 1 tbsp sea salt
  • 1 tbsp vanilla extract
  • ½ cup single cream
Instructions
  1. Heat your oven to 160C.
  2. In a large bowl, beat butter with granulated and brown sugars until fluffy. Beat in eggs, sour cream and vanilla until smooth.
  3. Whisk together flour, baking powder, baking soda and salt; stir into butter mixture alternately with buttermilk, making 2 additions of dry ingredients and 1 of buttermilk.
  4. Place your peeled apples in rows in a large rectangle baking tray. Pour your batter over the apples then bake for 35-40 mins.
  5. Meanwhile, add your brown sugar, butter, salt, vanilla extract and cream to a small pan and bring to a boil, whisking all the while.
  6. Pour your caramel over the cake, carve into squares with an apple per slice and serve!
