Strawberry Avocado Salad
This makes us ACTUALLY want to eat salad

  • ¼ c. extra-virgin olive oil
  • 2 tbsp. fresh lemon juice
  • 1 tsp. poppy seeds, plus more for garnish
  • 1 tsp. honey
  • ½ tsp. dijon mustard
  • Kosher salt
  • Freshly ground black pepper
  • 5 c. packed Wellsley Farms baby spinach
  • 2 c. strawberries, halved or quartered, if large
  • 1 avocado, peeled, pitted and chopped
  • ½ c. sliced almonds, lightly toasted, plus more for garnish
  • ½ small red onion, thinly sliced
  • 4 oz. goat cheese, crumbled
  1. In a small jar with a tight fitting lid, shake oil with lemon juice, poppy seeds, honey, and mustard. Season with salt and pepper.
  2. In a large bowl, combine spinach, strawberries, avocado, almonds, and onion. Drizzle dressing over salad and toss to combine. Top with goat cheese, more poppy seeds and more almonds. Serve immediately.
