FOR THE CRUST
1 c. graham cracker crumbs
¾ c. rolled oats
½ c. melted butter
¼ c. brown sugar
FOR THE CHEESECAKE
2 8-oz. blocks cream cheese, softened
2 large eggs
¼ c. brown sugar
¼ c. white sugar
½ tsp. cinnamon
⅛ tsp. ginger
2 tbsp. cornstarch
2 tsp. pure vanilla extract
2 apples, peeled and thinly sliced
FOR THE APPLE CRISP TOPPING
¼ c. all-purpose flour
¼ c. rolled oats
¼ c. brown sugar
½ tsp. cinnamon
2 tbsp. melted butter
FOR SERVING
whipped cream
Caramel, for drizzling
Instructions
Make Crust: Preheat oven to 350° and grease a 9" springform pan. In a mixing bowl, combine graham cracker crumbs, oats, butter, and sugar. Press inside bottom of greased springform pan.
Bake until golden, 7 to 8 minutes. Let cool while you make filling.
Make the Cheesecake Filling: In the bowl of a stand mixer fitted with a paddle attachment, beat cream cheese and eggs until fluffy and no clumps remain. Add brown sugar, white sugar, cinnamon, ginger, cornstarch, and vanilla and beat until combined. Pour on top of crust.
Top with a layer of sliced apples.
Make Crisp Topping: In a medium bowl, combine flour, oats, brown sugar, cinnamon, and butter. Sprinkle over apple layer.
Bake until golden, 43 to 45 minutes. Let cool 15 minutes, then refrigerate overnight.
When ready to serve, top with a dollop of whipped cream and drizzle with caramel.
