Beef Stew Cheesy Calzone

Ingredients
  • Beef Stew:
  • 2 tbsp flour
  • Salt and pepper
  • 1 lb diced stewing beef
  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • 2 onions, diced small
  • 500g mushrooms, sliced
  • 2 cloves garlic, diced small
  • 2 tbsp flour
  • 1 tbsp tomato paste
  • 2 cups red wine
  • 1½ cups beef stock
  • 1 tsp salt
  • 1 tsp pepper

  • Calzone Dough:
  • ½ cup warm water
  • .25oz dry yeast
  • 1 tsp yeast
  • ½ cup water
  • 2 tbsp olive oil
  • 2 tbsp honey
  • ¼ tsp salt
  • 3 cups plain flour

  • Grated Cheddar Cheese

  • Garlic Butter:
  • ½ cup salted butter
  • 3 cloves garlic, minced
  • 1 tbsp Chopped parsley
  • Pepper

Instructions
  1. Mix together 2 tbsp flour with salt and pepper in a bowl. Add the beef and toss to coat
  2. Heat oil in a pan over medium-high heat. Sear the beef until browned. Remove and set aside.
  3. Add butter to the pan and reduce to medium heat. Saute the onions and mushrooms until softened and lightly caramelized. Add in the garlic and cook until aromatic.
  4. Add the beef back in and 2 tbsp of flour, stirring to coat. Stir in the tomato paste and cook through for a couple of minutes.
  5. Pour in the red wine and beef stock. Bring it up to a simmer, place the lid on and let it bubble away gently until the meat is tender and broken apart. Then shred and set aside to cool slightly.
  6. Meanwhile, make the dough.
  7. Mix ½ cup lukewarm water and yeast together in a bowl, let sit until frothy.
  8. In a separate bowl, add water, olive oil, honey and salt. Add one fup of four and mix together. Then mix in yeast mixture and remaining flour one cup at a time.
  9. Knead on a floured surface until smooth.
  10. Roll the dough out into a large wide oval.
  11. Sprinkle a layer of cheese in the middle of one side. Top with a layer of the beef stew and another layer of cheese.
  12. Fold the dough over and pinch the edges to seal.
  13. Brush with egg wash and bake for 15-20 minutes until golden brown.
  14. While baking, mix together the garlic butter ingredients and brush over while still hot.
  15. Slice and serve. Enjoy!
