Ingredients
½ c. granulated sugar
¼ c. corn syrup
2 tbsp. honey
2 tbsp. water
Pinch kosher salt
2 tbsp. butter
2 tsp. pure vanilla extract
1⅓ c. dark roasted peanuts
¼ c. toasted sesame seeds
½ tsp. baking soda
Instructions
Line a large rimmed baking sheet with parchment paper or a silicone baking mat. In a medium pot over medium heat, combine sugar, corn syrup, honey, water, and salt. Once combined, avoid stirring.
Cook until mixture begins to turn light amber and reaches 280° on a candy thermometer, about 7 minutes. Gently and carefully stir in butter and vanilla until well-combined—mixture will sputter.
Add peanuts and sesame seeds. Continue cooking, stirring occasionally, until mixture reaches 300°, turns deeply golden, and just begins to smoke. Immediately remove from heat.
Working quickly, stir in baking soda until mixture foams vigorously, then swiftly pour onto prepared baking sheet. Using a silicone spatula, smooth mixture into a thin, even layer and allow to cool completely.
Break into chunks before serving.
