This French toast casserole tastes EXACTLY like s'mores.

Ingredients
Cooking spray
1 loaf challah, cut into 1" cubes
1¼ c. dark chocolate chips, divided
2 c. mini marshmallows
8 large eggs
2 c. whole milk
½ c. granulated sugar
1 tsp. ground cinnamon
2 tsp. pure vanilla extract
1 tsp. kosher salt
¼ tsp. coarsely crushed graham crackers
Instructions
Grease a 9"-x-13" baking dish with cooking spray. Layer half the bread in the dish and top with ½ cup each marshmallow and chocolate chips. Repeat with remaining bread, ½ cup each marshmallow and chocolate chips.
In a large bowl, whisk together eggs, milk, sugar, cinnamon, vanilla, and salt until fully combined. Pour egg mixture evenly over bread mixture; press with palms to fully submerge. Let stand at room temperature for at least 30 minutes, or refrigerate up to 1 day.
Preheat oven to 350°. Top with remaining 1 cup marshmallows and bake casserole until puffed and golden, 50 minutes to 1 hour. If marshmallows are caramelizing too quickly, cover and tent with foil.
Let cool 10 minutes, then sprinkle with graham crackers before serving.
