Ingredients
1 onion, finely diced
3 cloves garlic, crushed
680 g jar passata
1 tbsp. tomato puree
250 g mascarpone
2 tsp. dried oregano
2 tsp. caster sugar
1 tbsp. olive oil
650 ml boiling water
350 g spaghetti
Small handful of fresh basil
Instructions
Preheat your oven to 210°C (190°C Fan).
In a large bowl, mix together the onion, garlic, passata, tomato puree, mascarpone, oregano, sugar, oil and boiling water until evenly combined. Season generously with salt and pepper.
Add the spaghetti to a large, high sided roasting tin. Pour over the tomato and mascarpone mixture and cover with foil. Bake in the middle of the oven for 40-45 minutes until the spaghetti is cooked and the sauce has thickened. Stir every 10-15 minutes to ensure the spaghetti cooks evenly and doesn’t stick together. Top with the basil and serve.
