Ingredients
2 sheets salted matzo
1 c. shredded low-moisture mozzarella, divided
6 tbsp. vodka sauce or tomato sauce
12 thin slices jalapeño
Grated Parmesan and fresh basil, for topping
Hot honey, for drizzling (optional)
Instructions
Place a rack in center of oven; preheat to 450°. Arrange matzo sheets on a baking sheet. Top each with ¼ cup mozzarella.
Bake pizzas just until cheese is melted, about 2 minutes.
Spoon 2 to 3 tablespoons sauce on each pie. Sprinkle with another ¼ cup mozzarella. Top with jalapeño.
Continue to bake pizzas until mozzarella is melted, 2 to 3 minutes more. If desired, heat broiler and broil pizzas, watching closely, until mozzarella slightly browns, about 1 minute more.
Top pizzas with Parmesan and basil. Drizzle with hot honey (if using).
