Churro Ice Cream Sandwiches

Bite through 2 crispy, cinna-sugary churros into cold, creamy vanilla ice cream.
Ingredients
  • 3 cups water
  • ⅓ cup oil
  • ½ tablespoon salt
  • 2 cups flour
  • Oil, for frying
  • 1 cup sugar
  • ¼ cup cinnamon
  • Vanilla Ice Cream
  • 2 cups thickened cream
  • ½ cup sweetened condensed milk
  • 1 tsp vanilla
  • choc sauce to drizzle
Instructions
  1. To make ice cream combine cream, vanilla and sweetened condensed milk into a large bowl and whip until you reach stiff peaks. Place into a deep dish lined with plastric wrap and freeze for 3 hours. Then when you’re ready use a disc cutter to cut out discs.
  2. In a large pot, bring the water, oil, and salt to a boil.
  3. Add the flour and turn the heat off. Quickly stir the flour until it forms a smooth paste/ball.
  4. Transfer the dough into a piping bag lined with a star tip. Allow it to cool for 15 min.
  5. Pipe 6-inch spirals onto a sheet lined with parchment paper, starting from the middle and going around in a circle, making sure that there are no gaps between the loops.
  6. Repeat with the remaining dough.
  7. Freeze the circles for at least 2 hours.
  8. Heat oil in a pot over high heat.
  9. Fry the circles until light golden brown, then drain them on a paper towel.
  10. Mix the sugar and the cinnamon in a separate bowl.
  11. Coat each churro disc in the cinnamon sugar mix, shaking off any excess.
  12. Place a discs of ice cream in between 2 churro discs.
  13. Enjoy!
