Cotton Candy Fudge

This is one fudgin' delicious way to satisfy your sweet tooth.
Ingredients
- Ganache
- 100g white chocolate + 50ml cream
- 100g white chocolate + 50ml cream
- 1 drop pink food gel
- 1 drop blue food gel
- Fudge
- 2 cups sugar
- ¾ cup butter
- 320g white chocolate or vanilla chips
- 200g jar marshmallow cream
- ¾ cup heavy whipping cream
- 1½ teaspoons cotton candy flavouring
- 1 drop pink food gel
- 1 drop blue food gel
- Sprinkles
Instructions
- Ganache
- Add each portion of cream into a mixing bowl. Add food colouring and mix until well combined. Add each portion of chocolate. Microwave for 20 seconds at a time mixing each time until smooth. Set aside.
- Fudge
- Line a 13×9 inch pan with foil and spray with nonstick spray.
- Combine sugar, butter, heavy cream and butter in a saucepan, cooking and stirring over low heat until the sugar is dissolved.
- Once the sugar is dissolved, bring the contents to a boil while stirring for about 4 minutes. Remove from the heat and mix in the marshmallow cream and vanilla chips until all of the chips are melted.
- Pour ¾ of the mixture into the foil-lined pan.
- Add the cotton candy flavoring to the saucepan and stir until combined.
- Add pink food gel to half the fudge and blue food gel to the other half. Drizzle each colour of fudge into the prepared baking tin.
- Chill until set. Drizzle with ganache and sprinkle with coloured sprinkles. Set for 2 hours or overnight. Cut into small squares. These are sweet! A little goes a long way!
