Lemon Cheesecake Cookies

Ingredients
- ½ cup butter, softened
- ¼ cup cream cheese, softened
- 1 cup sugar
- 1 egg
- ½ teaspoon vanilla extract
- 2½ cups all-purpose flour, divided
- 1 teaspoon baking soda
- 2 teaspoons cornstarch
- ¼ teaspoon salt
- 2 tablespoons lemon zest
- 3 tablespoons lemon juice
- ¾ cup powdered sugar
Instructions
- Combine butter and and cream cheese in a bowl and beat for 1 minute. Add sugar, egg and vanilla extract, beating until light and fluffy.
- Beat in 1¼ cups flour, followed by baking soda, cornstarch, salt, lemon zest and lemon juice.
- Beat in remaining flour until dough starts to form like a ball. Cover and refrigerate dough for at least 2 to 3 hours, or overnight.
- Preheat oven to 350 degrees Fahrenheit. Grease a baking sheet with cooking spray.
- Scoop about 1½ tablespoons of cookie dough and form into a ball. Place on baking sheet.
- Bake cookies for 8 to 10 minutes. Remove from oven and while cookies are still hot, lightly press down. Cool cookies completely.
- While cookies cool, make the glaze. Whisk together powdered sugar and milk or water until desired consistency is reached. Drizzle glaze over cookies and allow to harden.
- Serve and enjoy!
