Brunswick Stew

If you're in the mood for some serious comfort food with a twist, this Brunswick Stew is the way to go. It's got sizzling onions and garlic, BBQ sauce, and tender pulled pork all in one pot!
Ingredients
- ¼ cup butter unsalted
- ½ medium yellow onion finely chopped
- 4 cloves garlic minced
- 3 cups chicken stock
- 1 can fire roasted tomatoes 14.5 ounce
- 3 tablespoons tomato paste
- 2 cups barbecue sauce plus more for topping
- 2 tablespoons worcestershire sauce
- 1 can sweet corn 14.5 ounce drained
- 1 can lima beans 14.5 ounce drained
- ¼ teaspoon cayenne pepper
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 cups smoked pulled pork
Instructions
- Heat the butter in a large pot over medium high heat. Saute the onions in the butter until they are tender, about 5 minutes. Add the garlic and saute for another 2 minutes.
- To the pot add the tomatoes, tomato paste, barbecue sauce, worcestershire sauce, corn, lima beans, cayenne pepper, salt, pepper, and pulled pork.
- Stir everything together until it is all well incorporated. Bring the stew to a boil then reduce the heat to low. Cover the pot and simmer the stew for about an hour.
- Remove the stew from heat and serve fresh with additional BBQ sauce drizzled over the top.
