If you're in the mood for some serious comfort food with a twist, this Brunswick Stew is the way to go. It's got sizzling onions and garlic, BBQ sauce, and tender pulled pork all in one pot!
Ingredients
  • ¼ cup butter unsalted
  • ½ medium yellow onion finely chopped
  • 4 cloves garlic minced
  • 3 cups chicken stock
  • 1 can fire roasted tomatoes 14.5 ounce
  • 3 tablespoons tomato paste
  • 2 cups barbecue sauce plus more for topping
  • 2 tablespoons worcestershire sauce
  • 1 can sweet corn 14.5 ounce drained
  • 1 can lima beans 14.5 ounce drained
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 cups smoked pulled pork
Instructions
  1. Heat the butter in a large pot over medium high heat. Saute the onions in the butter until they are tender, about 5 minutes. Add the garlic and saute for another 2 minutes.
  2. To the pot add the tomatoes, tomato paste, barbecue sauce, worcestershire sauce, corn, lima beans, cayenne pepper, salt, pepper, and pulled pork.
  3. Stir everything together until it is all well incorporated. Bring the stew to a boil then reduce the heat to low. Cover the pot and simmer the stew for about an hour.
  4. Remove the stew from heat and serve fresh with additional BBQ sauce drizzled over the top.
