Matzo Pizza

If you're observing #Passover, you might have lots of leftover Matzo—and pizza is just the thing to make with it
Ingredients
- 2 sheets salted matzo
- 1 c. shredded low-moisture mozzarella, divided
- 6 tbsp. vodka sauce or tomato sauce
- 12 thin slices jalapeño
- Grated Parmesan and fresh basil, for topping
- Hot honey, for drizzling (optional)
Instructions
- Place a rack in center of oven; preheat to 450°. Arrange matzo sheets on a baking sheet. Top each with ¼ cup mozzarella.
- Bake pizzas just until cheese is melted, about 2 minutes.
- Spoon 2 to 3 tablespoons sauce on each pie. Sprinkle with another ¼ cup mozzarella. Top with jalapeño.
- Continue to bake pizzas until mozzarella is melted, 2 to 3 minutes more. If desired, heat broiler and broil pizzas, watching closely, until mozzarella slightly browns, about 1 minute more.
- Top pizzas with Parmesan and basil. Drizzle with hot honey (if using).
