Oatmeal Fudge Bars

Oatmeal doesn't get enough credit for being SO good in desserts! And that makes it healthy, right?
Ingredients
- FOR COOKIE LAYERS
- 2 c. all-purpose flour
- 2 c. quick-cooking oats
- 1 tsp. baking powder
- 1 tsp. kosher salt
- 1 c. (2 sticks) butter, softened
- ¾ c. lightly packed brown sugar
- ¾ c. granulated sugar
- 1 tsp. pure vanilla extract
- 2 large eggs
- FOR THE FILLING
- 1 (14-oz.) can sweetened condensed milk
- 1 (12-oz.) bag chocolate chips
- 2 tbsp. butter
- ¼ tsp. kosher salt
Instructions
- Preheat oven to 350°. Line a 9”-x-13” pan with parchment paper and grease with cooking spray. In a medium saucepan over medium-low heat, combine sweetened condensed milk, chocolate chips, butter, and salt. Cook, stirring often, until melted. Remove from heat.
- In a medium bowl, whisk together flour, oats, baking powder, and salt.
- In a large bowl using a hand mixer (or in the bowl of a stand mixer), beat butter, sugar, and vanilla and until light and fluffy. Add eggs one at a time, beating well between each addition. Add flour mixture and mix until just combined.
- Spread about half the cookie dough into prepared pan in an even layer, then spread chocolate filling on top. Scatter remaining cookie dough on top.
- Bake until set and lightly golden on top, 40 minutes. Cool to room temperature before serving.
