Baked Brie Bread Bowl with Caramelized Onions

Ingredients
  • Bread Bowl
  • 1 french bread bowl, ¼ top removed
  • ⅓ cup gruyere, grated
  • avocado oil spray
  • large garlic clove, halved
  • Caramelized Onion Baked Brie
  • 1 8 ounce triple creme brie wheel, top ⅛ removed
  • 1 tablespoon avocado oil
  • 1 tablespoon salted butter
  • ¾ pound yellow onion, halved and thinly sliced
  • 2 cloves garlic, minced
  • ¾ teaspoon kosher salt, or to taste, Diamond Crystal
  • ¾ teaspoon fresh thyme, roughly chopped
  • ½ teaspoon dijon mustard
  • ¾ teaspoon worcestershire sauce
  • pinch sugar
  • 1 tablespoon water
  • To Serve
  • honey crisp apple slices
  • thyme, for garnish
Instructions
  1. Caramelized Onions
  2. Over medium heat, add the olive oil and butter. Once butter melts, add the onions and stir every few minutes. Do not rush this process; caramelizing onions takes about 45 minutes to 1 hour. As you cook the onions, take care not to let the mixture brown too quickly, rather it should slowly brown over time. If the mixture dries out, add 1½ teaspoons of water at a time and stir. Once onions are lightly caramelized, add salt and stir to combine.
  3. Once the onions are deeply browned and caramelized, increase the heat to medium-high. Add garlic and thyme. Cook for two minutes. Stir in dijon, worcestershire, water, and sugar. Cook until liquid reduces, about 2 – 3 minutes. Turn off heat, cover with lid and set aside until ready to use.
  4. Bread Bowl
  5. Preheat oven to 350°F.
  6. Use a bread knife to remove the top quarter of the bread bowl. Place brie over the top center of the bread bowl. Use a knife to trace the outside of the brie. Scoop out a deep enough well for the brie to nestle inside the bowl.
  7. Place the brie inside the crevice. Use a knife to cut 1½ – 2-inch thick wedges on the top. As you cut down, take care not to slice all the way through the bottom of the bread bowl. Spray the top of the bread bowl with avocado oil then place in the oven for 20 minutes.
  8. Carefully remove the brie bowl from the oven, top the brie with gruyere and evenly spread the caramelized onion mixture on top of the gruyere. Return to the oven for another 5-8 minutes or until brie is completely melted.
  9. Grate the top of the bread bowl with fresh garlic. Serve immediately and enjoy!
