Potato Noodles

Low-effort, high-reward potato noodles pair perfectly with a chili oil sauce.
Ingredients
- 1 cup potato starch, plus more for dusting
- ½ cup boiling water
- sauce of choice, for serving
Instructions
- In a medium bowl, combine the potato starch and boiling water. You will instantly see some gelatinization when the hot water comes into contact with the starch. Using a whisk, mix thoroughly to form a gelatinous mixture.
- Gather the mixture with your hands to form a ball, then knead for 8-10 minutes, until the dough is extremely stretchy, smooth, and without any small lumps.
- Dust a clean surface with potato starch, then roll out the dough into a 4-inch square. Cut the dough into 2-inch-wide strips, then roll them into the shape of a rope.
- Bring a large pot of water to a boil. Prepare an ice bath in a large bowl and set nearby.
- Add the noodles to the boiling water and cook for 5 minutes, or until floating. Transfer to the ice bath to stop the cooking process.
- Toss with your favorite sauce.
