Salt & Vinegar Cucumber Chips are the low-carb version of your favorite potato chips.
Ingredients
- 1 large thick-skinned cucumber
- 1½ tbsp. white distilled vinegar
- 1 tsp. kosher salt
- ¼ tsp. garlic powder
Instructions
- Preheat oven to 225° and lightly grease two large baking sheet with parchment. Using a mandoline or a sharp knife, cut cucumber into slices ⅛” thick.
- Pat cucumbers dry with paper towels and place in a medium bowl. Add vinegar, salt, and garlic powder and toss to combine.
- Place cucumbers in an even layer on prepared baking sheets. Bake until dried out, 1 hour and 30 minutes, flipping halfway through. Remove cucumbers from tray as the start to crisp and allow others to keep baking.
