Cannoli Egg Rolls


Cannoli Egg Rolls are like fried pieces of HEAVEN.
  • 1 (16-oz.) container ricotta
  • ⅔ c. powdered sugar, plus more for garnish
  • 1 tsp. orange zest
  • ½ tsp. pure vanilla extract
  • ¼ c. mini chocolate chips
  • 9 egg roll wrappers
  • ½ c. chocolate chips
  • 1 tsp. canola oil
  • ¼ c. chopped pistachios, for garnish
  1. Make ricotta filling: In a large bowl mix together ricotta, powdered sugar, orange zest, and vanilla until fully combined. Fold in mini chocolate chips.
  2. Place an egg roll wrapper on a clean surface in a diamond shape and brush edges lightly with water. Spoon two heaping tablespoons ricotta filling into a line in the center. Fold up bottom half, tightly fold in sides, and gently roll upward to seal. Repeat with remaining wrappers and filling.
  3. In a large skillet over medium heat, pour enough oil to reach 1" up the side of skillet. Heat until oil starts to bubble when a drop of water is added. Add egg rolls and fry until golden, about 1 minute per side. Transfer to a paper towel-lined plate to cool slightly.
  4. In a small bowl, microwave together chocolate and oil until smooth in 30-second increments. Drizzle over egg rolls, then sprinkle with pistachios and dust with powdered sugar.
