Cookie Dough Rice Krispie Treats

Give your classic rice krispie treat a major upgrade by adding layers of chocolate and cookie dough. It's easier than you'd think.
Ingredients
  • FOR THE RICE KRISPIE TREATS
  • 1 c. (2 sticks) butter, plus more for pan
  • 2 (12-oz.) bags marshmallows
  • ¼ tsp. kosher salt
  • 12 c. Rice Krispies
  • 8 oz. dark chocolate chips, melted
  • FOR THE COOKIE DOUGH FILLING
  • 1 c. (2 sticks) butter, softened
  • 1 c. packed brown sugar
  • 2 tsp. pure vanilla extract
  • 2 c. almond flour
  • ½ tsp. kosher salt
  • 1 c. mini chocolate chips
Instructions
  1. Make the Rice Krispie treats: Grease a 9"-x-13" baking pan with butter. In a large pot over medium heat, melt butter. Add marshmallows and salt and stir until completely melted. Continue cooking until marshmallows turn slightly golden, another 5 minutes. Remove from heat and stir in Rice Krispies.
  2. Pour into pan and smooth top, being careful not to pack rice krispie mixture into the pan too much. Let cool completely.
  3. Remove rice krispie treats from pan and drizzle chocolate over top, smooth into an even layer. Freeze until chocolate is firm, about 5 minutes.
  4. Meanwhile, make filling: In a large bowl, stir together butter, sugar, and vanilla until light and fluffy. Stir in almond flour and salt, then fold in mini chocolate chips.
  5. Using a serrated knife, slice the Rice Krispie in half crosswise. Spread cookie dough on top of one half of the Rice Krispies. Sandwich with the other half, keeping the chocolate topped side in the center. Refrigerate until cookie dough is firm, at least 1 hour. Slice into 12 servings.
