Salsa Verde Baked Eggs

We love Salsa Verde Baked Eggs for any meal of the day.
Ingredients
  • ½ c. salsa verde
  • 2 large eggs
  • ¼ c. cheddar, grated
  • ¼ c. Monterey jack, grated
  • cilantro, for serving
  • lime wedges, for serving
  • hot sauce, for serving
  • tortilla chips, for serving
Instructions
  1. Preheat oven to 400°. Pour salsa into a small oven proof dish. Make 2 wells in sauce, then crack an egg into each well. Sprinkle both cheeses all over and bake until egg whites are just set and cheese is melted, about 15 minutes.
  2. Garnish with cilantro, lime juice, and hot sauce. Serve warm with tortilla chips.
