Chocolate Avocado Bread

This fudgy chocolate avocado bread is the new banana bread.
Ingredients
- Cooking spray, for pan
- 1 c. all-purpose flour
- ½ c. cocoa powder
- 1 tsp. baking powder
- 1 tsp. ground cinnamon
- ½ tsp. kosher salt
- ½ c. mashed avocado
- 1 c. granulated sugar
- 2 large eggs
- 1 tsp. pure vanilla extract
- 1¼ c. grated zucchini
- 1 c. chocolate chips
Instructions
- Preheat oven to 350°. Line a loaf pan with parchment paper and grease with cooking spray. In a large bowl, whisk together flour, cocoa powder, baking powder, cinnamon, and salt.
- In another large bowl, stir together avocado, sugar, eggs, and vanilla. Add zucchini, then add flour mixture. Fold in chocolate chips.
- Transfer batter to prepared pan and bake until a toothpick inserted into the center comes out clean, about 1 hour.
- Let cool slightly in pan, then transfer to a cooling rack and cool completely.
