Chocolate Avocado Bread

This fudgy chocolate avocado bread is the new banana bread.
Ingredients
  • Cooking spray, for pan
  • 1 c. all-purpose flour
  • ½ c. cocoa powder
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • ½ tsp. kosher salt
  • ½ c. mashed avocado
  • 1 c. granulated sugar
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 1¼ c. grated zucchini
  • 1 c. chocolate chips
Instructions
  1. Preheat oven to 350°. Line a loaf pan with parchment paper and grease with cooking spray. In a large bowl, whisk together flour, cocoa powder, baking powder, cinnamon, and salt.
  2. In another large bowl, stir together avocado, sugar, eggs, and vanilla. Add zucchini, then add flour mixture. Fold in chocolate chips.
  3. Transfer batter to prepared pan and bake until a toothpick inserted into the center comes out clean, about 1 hour.
  4. Let cool slightly in pan, then transfer to a cooling rack and cool completely.
