Strawberry Avocado Salad

Ingredients
- ¼ c. extra-virgin olive oil
- 2 tbsp. fresh lemon juice
- 1 tsp. poppy seeds, plus more for garnish
- 1 tsp. honey
- ½ tsp. dijon mustard
- Kosher salt
- Freshly ground black pepper
- 5 c. packed Wellsley Farms baby spinach
- 2 c. strawberries, halved or quartered, if large
- 1 avocado, peeled, pitted and chopped
- ½ c. sliced almonds, lightly toasted, plus more for garnish
- ½ small red onion, thinly sliced
- 4 oz. goat cheese, crumbled
Instructions
- In a small jar with a tight fitting lid, shake oil with lemon juice, poppy seeds, honey, and mustard. Season with salt and pepper.
- In a large bowl, combine spinach, strawberries, avocado, almonds, and onion. Drizzle dressing over salad and toss to combine. Top with goat cheese, more poppy seeds and more almonds. Serve immediately.
