Salami Breakfast Cups

Salami Breakfast Cups are our favorite new low-carb breakfast.
Ingredients
- 60 thin salami slices, about 2½" in diameter
- 1 c. shredded mozzarella
- 12 large eggs
- Kosher salt
- Freshly ground black pepper
- Freshly chopped parsley, for garnish
Instructions
- Preheat oven to 400ยบ. Line the bottom of each cup of a 12-cup nonstick muffin tin with a slice of salami. Arrange 4 salamis around the center slice. Sprinkle each cup with mozzarella and crack an egg inside. Season with salt and pepper.
- Bake until eggs are cooked through, 12 to 15 minutes.
- Garnish with parsley before serving.
