Grill Pan Waffles

It really burns when a craving for homemade waffles hits and you realize your don't even own a waffle maker. Well, we have the backup plan. Grill them!
Ingredients
- 1¾ c. all-purpose flour
- ¼ c. granulated sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. kosher salt
- 1½ c. milk
- 4 tbsp. melted butter
- 3 large eggs
- 1 tsp. pure vanilla extract
- Cooking spray
- Softened butter, for serving
- Maple syrup, for serving
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a medium bowl, whisk together milk, melted butter, eggs, and vanilla. Add wet ingredients to dry and ingredients and mix until just combined.
- Heat a medium grill pan over medium heat and spray with cooking spray. Add about ½ cup batter in center of pan. Cook until bubbles form around edges and waffles are easy to flip, about 3 minutes, then flip and cook 2 minutes more. Repeat with remaining batter.
- Serve waffles warm with butter and maple syrup.
