Tuscan Butter Salmon Foil Packs

Ingredients
- ¼ c. butter, softened to room temperature
- ¼ c. freshly grated parmesan
- 2 tbsp. freshly chopped basil, plus more for garnish
- 2 sun-dried tomatoes, minced
- 2 cloves garlic, minced
- 1 tsp. dried oregano
- 4 (4-6 oz.) salmon filets
- 2 c. halved grape tomatoes
Instructions
- In a medium bowl, combine butter, parmesan, basil, sun-dried tomatoes, garlic, and oregano. Season with salt and pepper and stir until smooth.
- Cut 4 large pieces of foil about 10” long and place salmon in the center of each. Season each filet with salt and pepper.
- Divide tomatoes evenly between foil packs, then add a heaping tablespoon of butter to the top of each salmon filet. Fold foil packets crosswise to completely cover salmon, then roll sides to seal packet.
- Place foil packets on grill and cook until salmon is cooked through and tomatoes are just starting to burst, 10 to 12 minutes.
- Top with basil and serve hot.
