Zucchini Tater Tots


These are a great way to sneak extra veggies into the tater tots you already know your kid (and maybe you!) loves.
  • cooking spray
  • 3 large zucchini, grated
  • 2 large eggs, lightly beaten
  • ½ c. shredded cheddar
  • ½ c. grated Parmesan
  • 1 tsp. dried oregano
  • ¼ tsp. garlic powder
  • ¼ tsp. Kosher salt
  • Freshly ground black pepper
  • Ketchup, for serving
  1. Preheat oven to 400°F and grease a baking sheet withcooking spray. Using a box grater, grate zucchini onto a cleankitchen towel. Gather ends of the kitchen towel to coverzucchini completely, then squeeze out excess liquid over sink.
  2. In a large bowl, whisk eggs until yolks are broken up andmixture is yellow. Add zucchini, cheddar, Parmesan, oregano,garlic powder, salt, and pepper and mix until combined.Scoop 1 tablespoon of mixture and roll it into a tater-tot shapewith your hands. Place on the baking sheet.
  3. Bake until golden, 15 to 20 minutes. Serve with ketchup.
