Zucchini Tater Tots

These are a great way to sneak extra veggies into the tater tots you already know your kid (and maybe you!) loves.
Ingredients
- cooking spray
- 3 large zucchini, grated
- 2 large eggs, lightly beaten
- ½ c. shredded cheddar
- ½ c. grated Parmesan
- 1 tsp. dried oregano
- ¼ tsp. garlic powder
- ¼ tsp. Kosher salt
- Freshly ground black pepper
- Ketchup, for serving
Instructions
- Preheat oven to 400°F and grease a baking sheet withcooking spray. Using a box grater, grate zucchini onto a cleankitchen towel. Gather ends of the kitchen towel to coverzucchini completely, then squeeze out excess liquid over sink.
- In a large bowl, whisk eggs until yolks are broken up andmixture is yellow. Add zucchini, cheddar, Parmesan, oregano,garlic powder, salt, and pepper and mix until combined.Scoop 1 tablespoon of mixture and roll it into a tater-tot shapewith your hands. Place on the baking sheet.
- Bake until golden, 15 to 20 minutes. Serve with ketchup.
