Boursin Mashed Potatoes

Decadent Boursin mashed potatoes are incredibly creamy and perfectly seasoned. Level up your mashed potatoes with butter, heavy cream, and the addition of Boursin cheese, a soft gourmet cheese.
Ingredients
  • 2 ½ pounds Yukon Gold potatoes, or red potatoes
  • ½ cup butter, softened
  • ⅓ cup heavy whipping cream
  • 1 5.2 oz package Boursin Garlic & Fine Herbs Gournay Cheese, softened
  • ½ teaspoon garlic powder
  • ½ teaspoon coarse salt, or to taste
  • ¼ teaspoon cracked black pepper
  • fresh parsley, chopped
Instructions
  1. Wash and quarter the potatoes. Feel free to leave the skins on if you prefer.
  2. Add the potatoes to a large pot then fill the pot with enough water to cover the potatoes. Boil for 10-15 minutes or until tender.
  3. Drain the potatoes and return them to the pot.
  4. Add the butter, heavy cream, Boursin cheese, garlic powder, salt, and pepper.
  5. Use a potato masher or electric hand mixer to mash until incorporated and creamy. Mash them to your desired consistency. Leave them chunky or make them smooth. Be careful not to over-mix the potatoes!
  6. Taste and adjust the seasonings if needed.
  7. Garnish with additional butter and chopped parsley and serve warm!
